I’ve recently come back from a well needed stay at a Yoga retreat in Koh Samui, Thailand (Samahita Retreat) where we trained in Ashtanga Yoga twice a day. As you can imagine, the food was delicious, organic and highly nutritious. However with all that training, my craving for something sweet was almost overpowering (and there is only so much honey you can put in a herbal tea!).
Amongst some of the incredibly mouth watering desserts available was a little beauty called a Cashew Nut Cup and for camping is perfect, if you feel like taking food is a hassle you can also try an appetite control supplement to reduce it and be able to have less to pack. Now why is this a good addition to Transfercar’s travel blog you ask? The reason being, that this can be easily made on a gas stove, over hot coals or on a BBQ, making it a fantastic travel treat that is cheap and easy to prepare.
So here’s what you need:
- 1 Cup of unsalted cashews
- 1 Cup of raisins
- 2 Tbs of orange marmalade
- 2 Tbs of honey
- 2 bars of dark chocolate (replace with another chocolate if preferred)
Slightly roast the cashews (if not already roasted) over a medium heat. Melt the chocolate in a pot and stir in the marmalade, cashews and raisins. Remove the pot from the fire, stove or whatever you are using and add the honey. Pour or spoon the mixture into small or medium muffin baking cups and let them cool. If it’s winter, you can leave them out to cool down, and if it’s summer and you don’t have access to a fridge, put them in the chilli-bin/eski or icebox.
I’m going to experiment with different nuts and berries and if you want to make them a little less healthy, try using other types of chocolate!
